Make this rich and flavorful one-pot meal featuring tender chicken, soft gnocchi, bacon, cream cheese, and ranch seasoning. It is a quick and comforting dinner.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, cooked and crumbled
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (16 ounce) package potato gnocchi
  • 8 ounces cream cheese, cubed
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides and mostly cooked through, about 5-7 minutes. Remove the chicken and set it aside.
  3. Add the chopped onion to the pot and cook until soft, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and bring the mixture to a simmer.
  5. Add the gnocchi and the dry ranch seasoning mix to the pot. Stir well. Cook according to gnocchi package directions, usually until the gnocchi float to the top, about 5-7 minutes.
  6. Reduce the heat to low. Stir in the cubed cream cheese until it melts and the sauce thickens slightly.
  7. Return the cooked chicken to the pot. Stir in the heavy cream and shredded cheddar cheese until the cheese melts and the sauce is smooth and creamy.
  8. Stir in half of the crumbled bacon. Taste and adjust seasoning with salt and pepper if needed.
  9. Serve immediately, garnished with the remaining bacon crumbles and fresh parsley.

Notes

  • For a thicker sauce, let the mixture simmer uncovered for a few extra minutes after adding the cream cheese.
  • You can substitute frozen cooked chicken for fresh if you need to speed up the initial cooking time.
  • Use a good quality ranch seasoning mix for the best flavor.
