1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1 teaspoon Cajun seasoning (adjust to your heat preference)
1/2 cup chopped onion
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
1/2 cup cooked white rice (for serving or mixing in)
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Instructions
Heat the olive oil in a large skillet over medium-high heat.
Toss the shrimp with Cajun seasoning. Add shrimp to the hot skillet and cook for 1-2 minutes per side until pink. Remove shrimp and set aside.
Reduce heat to medium. Add the onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Sprinkle the flour over the onions and garlic. Stir constantly for 1 minute to cook out the raw flour taste.
Slowly whisk in the chicken broth until the mixture is smooth. Bring to a simmer and cook until the sauce thickens slightly, about 3 minutes.
Stir in the heavy cream and Parmesan cheese. Continue to cook until the sauce is smooth and creamy. Do not boil.
Return the cooked shrimp to the skillet. Stir gently to coat the shrimp in the sauce. Cook for 1 minute to heat through.
Serve the creamy Cajun shrimp mixture immediately over or mixed with the cooked white rice. Garnish with fresh parsley.
Notes
You can use frozen shrimp; thaw them completely and pat them very dry before seasoning for the best sear.
For a thicker sauce, simmer the broth mixture a little longer before adding the cream. For a thinner sauce, add a splash more broth or cream at the end.
To adjust the spice level, reduce the amount of Cajun seasoning used or use a milder blend.
