2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1 (3-pound) butternut squash, peeled, seeded, and cubed
4 cups vegetable broth
1 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
Pinch of nutmeg
Instructions
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute more until fragrant.
Add cubed butternut squash and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until squash is very tender, about 20 minutes.
Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
Return the soup to the pot. Stir in milk, salt, pepper, and nutmeg.
Heat gently over low heat until warmed through. Do not boil.
Serve hot.
Notes
For an extra creamy texture, use half-and-half or heavy cream instead of milk.
Garnish with toasted pumpkin seeds or a swirl of cream for a beautiful presentation.
