Make a rich, restaurant-style chicken Alfredo sauce at home with this simple, one-pan recipe that is perfect for a quick weeknight dinner.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 12 ounces fettuccine pasta
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken pieces with salt, pepper, and garlic powder.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the butter to the same skillet and let it melt. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring occasionally. Cook for about 3 minutes until the sauce slightly thickens.
  5. Reduce the heat to low. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Do not let the sauce boil after adding the cheese, or it may separate.
  6. Add the cooked chicken back to the skillet.
  7. While the sauce simmers, cook the fettuccine pasta according to package directions until al dente. Drain the pasta well.
  8. Add the drained pasta directly to the skillet with the Alfredo sauce and chicken. Toss everything together until the pasta is fully coated.
  9. Serve immediately, garnished with fresh parsley.

Notes

  • For a thicker sauce, let the cream and broth simmer for an extra minute or two before adding the cheese.
  • Use freshly grated Parmesan cheese; pre-shredded cheese often contains anti-caking agents that prevent smooth melting.
  • If the sauce seems too thick when adding the pasta, add a splash of the reserved pasta cooking water to thin it slightly.
