Make this hearty Cowboy Cornbread Casserole when you need a filling, budget-friendly meal fast. This recipe uses Jiffy Mix for a simple, comforting dinner topped with cheesy cornbread.

  • 1 pound ground beef
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (10 ounces) diced tomatoes and green chilies (Rotel), undrained
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup shredded cheddar cheese, divided
  • 1 box (8.5 ounces) corn muffin mix (like Jiffy), prepared according to package directions

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef until it is browned completely. Drain off any excess grease.
  3. Return the cooked beef to the skillet. Add the drained black beans, drained corn, undrained diced tomatoes and green chilies, and the taco seasoning mix. Stir everything together well.
  4. Cook this beef mixture for about 5 minutes, stirring occasionally, until it is heated through.
  5. Remove the skillet from the heat. Stir in half (1/2 cup) of the shredded cheddar cheese into the beef mixture.
  6. Spread the beef mixture evenly into the bottom of your prepared baking dish.
  7. Prepare the corn muffin mix according to the package directions. Pour the batter evenly over the top of the beef mixture in the dish.
  8. Bake for 20 to 25 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  9. Remove the casserole from the oven. Sprinkle the remaining 1/2 cup of cheddar cheese over the top. Let it sit for 5 minutes so the cheese melts slightly before serving.

Notes

  • For a richer flavor, substitute cream of mushroom soup for the Rotel if you prefer less spice.
  • You can easily double this recipe and freeze half for a future budget friendly weeknight dinner.
  • Serve this savory cornbread bake with a dollop of sour cream or a side of salsa for an extra Tex Mex kick.
