1 large egg
1 tablespoon unsweetened cocoa powder
1 tablespoon almond flour
1 teaspoon maple syrup or sweetener of choice
1/4 teaspoon vanilla extract
1/4 teaspoon baking powder
1 small square (5g) dark chocolate, chopped (optional)

Instructions
Place the cottage cheese in a small, microwave-safe mug or ramekin. Blend it with an immersion blender or fork until completely smooth.
Add the egg, cocoa powder, almond flour, sweetener, vanilla extract, baking powder, and salt to the mug.
Mix all ingredients thoroughly until you have a smooth, uniform batter. Scrape down the sides.
If using, press the chopped dark chocolate square into the center of the batter.
Microwave on high for 60 to 90 seconds. Cooking time varies by microwave wattage; start checking at 60 seconds. The brownie is done when the top looks set but the center is still slightly soft for a fudgy texture.
Let the brownie cool in the mug for 2 minutes before eating directly from the mug.
Notes
For the smoothest texture, blend the cottage cheese until it has the consistency of Greek yogurt before adding other ingredients.
If you prefer a cake-like texture, cook for an additional 10-15 seconds.
