14 ounces sweetened condensed milk
2 teaspoons pure vanilla extract
1/4 teaspoon salt
4 cups unsweetened shredded coconut
2 large egg whites
1/4 cup granulated sugar
4 ounces dark chocolate, chopped
Instructions
Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
In a large bowl, combine the sweetened condensed milk, vanilla extract, and salt. Mix well.
Stir in the shredded coconut until it is fully coated with the milk mixture.
In a separate clean bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff, glossy peaks form.
Gently fold the beaten egg whites into the coconut mixture in three additions, being careful not to deflate the volume.
Drop rounded tablespoons of the mixture onto the prepared baking sheets, forming mounds. You can use a small cookie scoop for uniform size.
Bake for 12 to 15 minutes, or until the edges and tops are golden brown. Watch closely to prevent burning.
Remove the macaroons from the oven and let them cool completely on the baking sheet before moving them.
Melt the chopped dark chocolate in a microwave-safe bowl in 30-second intervals, stirring between each interval until smooth.
Transfer the melted chocolate to a small piping bag or a zip-top bag with a tiny corner snipped off. Drizzle the chocolate over the cooled macaroons.
Allow the chocolate to set before serving.
Notes
For easier cleanup, you can line the baking sheets with silicone baking mats instead of parchment paper.
If you prefer a more toasted flavor, lightly toast half of the shredded coconut in a dry skillet over medium heat before mixing it into the wet ingredients.
To prevent the macaroons from sticking to the pan, make sure the parchment paper is securely placed or use silicone mats.
