  • 1 teaspoon granulated sugar
  • 1 cup warm water (105-115°F)
  • 2 ½ cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 3 tablespoons olive oil, plus more for greasing
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. In a small bowl, combine the yeast, 1 teaspoon sugar, and warm water. Let stand for 5-10 minutes until foamy.
  2. In a large bowl, whisk together the flour and salt.
  3. Add the yeast mixture and 3 tablespoons of olive oil to the flour mixture. Stir with a wooden spoon until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Lightly grease a clean bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Grease a 9×13 inch baking pan with olive oil.
  7. Gently deflate the dough and press it into the prepared baking pan, spreading it evenly to fill the pan.
  8. Cover the pan with plastic wrap and let the dough rest for another 20-30 minutes.
  9. Preheat your oven to 400°F (200°C).
  10. In a small bowl, combine the 1/4 cup sugar and cinnamon.
  11. Uncover the focaccia. Drizzle the melted butter over the surface of the dough. Sprinkle the cinnamon sugar mixture evenly over the buttered dough.
  12. Using your fingertips, gently dimple the surface of the dough.
  13. Bake for 20-25 minutes, or until golden brown and cooked through.
  14. Let cool slightly in the pan before slicing and serving.
