2 cups long-grain white rice
2 cups water
1 teaspoon salt
2 tablespoons vegetable oil or neutral cooking oil
1/2 cup fresh cilantro, finely chopped
1/4 cup fresh lime juice (about 2 limes)
1 teaspoon lime zest
Instructions
Rinse the rice under cold water in a fine-mesh sieve until the water runs clear. This step helps the rice cook up fluffy.
Combine the rinsed rice, water, salt, and oil in a medium saucepan.
Bring the mixture to a boil over medium-high heat.
Once boiling, immediately reduce the heat to the lowest setting, cover the pot tightly with a lid, and simmer for 15 minutes without lifting the lid.
Remove the saucepan from the heat and let it sit, covered, for another 10 minutes. Do not lift the lid during this resting period.
Remove the lid. Fluff the rice gently with a fork.
Stir in the chopped cilantro, lime juice, and lime zest until evenly distributed. Taste and add more salt or lime juice if needed for your preference.
Serve immediately or cool for meal prepping burrito bowls.
Notes
For a quicker method, you can cook this rice in a rice cooker using the standard white rice setting, then stir in the cilantro and lime after it finishes cooking.
If you prefer a less intense flavor, start with half the amount of lime juice and add more to taste.
To make this recipe brown rice friendly, increase the cooking time by about 20 minutes and use 3 1/2 cups of water instead of 2 cups.
