Make restaurant-style dry fried green beans at home quickly. This recipe features perfectly blistered green beans tossed in a savory, garlicky soy sauce.

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons neutral oil (like canola or vegetable)
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon toasted sesame oil
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sugar, sesame oil, and red pepper flakes. Set aside.
  2. Heat your wok or large skillet over high heat until it is very hot. Add the neutral oil.
  3. Add the trimmed green beans to the hot wok in a single layer if possible. Cook without stirring for 1 to 2 minutes to allow them to char slightly.
  4. Toss the beans frequently and continue cooking for 4 to 6 minutes until they are tender-crisp and show visible blistering or char marks.
  5. Push the beans to one side of the wok. Add the minced garlic and ginger to the empty space and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  6. Toss the garlic and ginger with the green beans.
  7. Pour the prepared sauce mixture over the beans. Toss quickly to coat everything evenly. Cook for 1 minute until the sauce thickens slightly and coats the beans.
  8. Remove from heat immediately and serve your garlic green beans hot.

Notes

  • For an extra layer of flavor, you can substitute vegetable broth for 1 tablespoon of the soy sauce if you prefer a less salty sauce.
  • If you do not have a wok, use the largest, heaviest skillet you own and cook the beans in batches to maintain high heat for proper blistering.
  • These blistered green beans pair well with stir-fried noodles or any simple baked chicken or tofu dish for a fast dinner.
