  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 8 cups low-sodium chicken broth
  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 bay leaf
  • 1 cup dried egg noodles
  • 1/2 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large stockpot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  2. Stir in the dried thyme and rosemary. Cook for 1 minute until fragrant.
  3. Pour in the chicken broth. Add the chicken pieces and the bay leaf. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 to 20 minutes, or until the chicken is cooked through.
  4. Carefully remove the cooked chicken from the pot and place it on a cutting board. Leave the broth simmering.
  5. Add the egg noodles to the simmering broth. Cook according to package directions, usually 6 to 8 minutes, until tender.
  6. While the noodles cook, shred or dice the cooked chicken using two forks.
  7. Return the shredded chicken to the pot. Remove and discard the bay leaf.
  8. Stir in the fresh parsley. Taste the soup and season generously with salt and pepper. Serve this nourishing chicken soup hot.

  • For the richest flavor, use chicken thighs instead of breasts; they stay more tender during simmering.
  • If you want a quicker meal, you can substitute 3 cups of cooked, shredded rotisserie chicken, adding it in Step 6 instead of simmering raw chicken.
