1 pound ground beef
1 small onion, chopped
1 packet (1 ounce) taco seasoning mix
1/2 cup water
4 ounces cream cheese, softened and cubed
1 cup shredded cheddar cheese
1/2 cup sour cream
12 hard taco shells or soft tortillas
Optional toppings: lettuce, salsa, diced tomatoes
Instructions
Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
Stir in the taco seasoning mix and water. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally, until the liquid reduces slightly.
Reduce the heat to low. Add the softened cream cheese cubes to the meat mixture. Stir continuously until the cream cheese is completely melted and incorporated, creating a creamy texture throughout the beef.
Remove the skillet from the heat. Stir in the shredded cheddar cheese and sour cream until just combined and melted.
Warm your taco shells or tortillas according to package directions.
Spoon the creamy ground beef mixture evenly into the shells or tortillas.

Notes
For extra flavor, add 1 teaspoon of chili powder and 1/2 teaspoon of cumin along with the taco seasoning.
If you prefer a thicker filling, use less water when simmering the meat.
