  • 4 cups beef broth
  • 8 ounces dried pasta (like rotini or penne)
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large, deep skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 4 minutes.
  3. Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until the garlic is fragrant.
  4. Pour in the beef broth and bring the mixture to a boil.
  5. Add the dried pasta to the skillet, stirring to submerge it in the liquid.
  6. Reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  7. Remove the skillet from the heat. Stir in the heavy cream until combined.
  8. Add the cheddar cheese and Parmesan cheese. Stir continuously until the cheese is melted and the sauce is creamy.
  9. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving directly from the skillet.
