1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
12 ounces pasta (penne or rotini work well)
4 cups chicken broth
1 cup heavy cream
4 ounces cream cheese, cubed
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried Italian seasoning
Salt and black pepper to taste
2 tablespoons olive oil
1/2 cup chopped fresh parsley, for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Season the chicken lightly with salt and pepper.
Add the uncooked pasta, chicken broth, garlic powder, onion powder, and Italian seasoning to the skillet. Stir well to combine.
Bring the mixture to a boil, then immediately reduce the heat to low, cover the skillet, and simmer for 10 minutes, stirring occasionally to prevent sticking.
Remove the skillet from the heat. Stir in the heavy cream and cubed cream cheese until the cream cheese melts and the sauce begins to thicken.
Stir in the mozzarella cheese and half of the Parmesan cheese until fully incorporated and melted. Taste and adjust salt and pepper as needed.
If you used an oven-safe skillet, sprinkle the remaining Parmesan cheese over the top. If not, transfer the mixture to the prepared baking dish and top with the remaining Parmesan.
Bake uncovered for 15 to 20 minutes, or until the sauce is bubbly and the pasta is tender.
Let the pasta rest for 5 minutes before serving. Garnish with fresh parsley, if desired.
Notes
For a richer sauce, substitute half of the heavy cream with half-and-half.
You can add 1 cup of frozen peas or broccoli florets during the last 5 minutes of simmering time.
If the sauce seems too thick after baking, stir in a splash of milk or reserved pasta water.
