You need a simple, hearty dinner that satisfies the whole family on a busy night. This Cheesy Chicken and Rice Casserole is a one-dish wonder, combining tender chicken, fluffy rice, and gooey melted cheese into the ultimate comfort food bake.

  • 2 cups cooked, shredded chicken
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked long-grain white rice
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup milk
  • 1/2 cup frozen peas and carrots mix (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, chicken broth, onion powder, garlic powder, salt, and pepper. Mix until smooth.
  3. Stir in the cooked chicken, uncooked rice, milk, and the optional peas and carrots mix into the soup mixture.
  4. Fold in 1 1/2 cups of the shredded cheddar cheese until everything is evenly coated.
  5. Spread the mixture evenly into your prepared baking dish.
  6. Cover the dish tightly with aluminum foil.
  7. Bake for 45 minutes.
  8. Carefully remove the foil. Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  9. Return the dish to the oven, uncovered, and bake for another 10 to 15 minutes, or until the rice is tender and the cheese is melted and bubbly.
  10. Let the cheesy chicken and rice casserole rest for 5 minutes before you serve it.

Notes

  • For an extra layer of flavor, use leftover rotisserie chicken. This speeds up your prep time significantly.
  • If you want a richer flavor, substitute one can of condensed soup with cream of celery soup.
  • To make this a true one-pan chicken and rice dish, stir in 1 cup of steamed broccoli florets when you add the chicken.
