1 pound boneless, skinless chicken breasts
1 pound fettuccine pasta
2 tablespoons olive oil
1 cup chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese, divided
1/2 cup butter
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup panko breadcrumbs
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until fully done, about 6-8 minutes per side. Remove chicken, let it cool slightly, and shred or dice it.
Cook the fettuccine according to package directions until al dente. Drain well.
While pasta cooks, make the sauce. In the same skillet, melt the butter over medium heat. Add garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and heavy cream. Bring to a simmer, stirring constantly. Reduce heat to low.
Stir in 3/4 cup of the Parmesan cheese until the sauce is smooth. Season with remaining salt and pepper.
In a large bowl, combine the cooked pasta, shredded chicken, and Alfredo sauce. Mix well.
Transfer the mixture to the prepared baking dish.
In a small bowl, mix the remaining 1/4 cup Parmesan cheese with the panko breadcrumbs. Sprinkle this mixture evenly over the top of the pasta.
Bake for 20 to 25 minutes, or until the sauce is bubbly and the topping is golden brown and crispy.
Let stand for 5 minutes before serving.
Notes
To prevent sogginess, ensure your cooked pasta is slightly underdone (al dente) before mixing with the sauce.
For extra flavor in the topping, mix 1 tablespoon of melted butter into the breadcrumbs before adding the cheese.
You can substitute rotisserie chicken for the fresh cooked chicken to save time.
