Make a hearty, creamy cheeseburger soup in your slow cooker. This recipe captures classic cheeseburger flavors for a simple, comforting weeknight dinner.

Ingredients

  • 1.5 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10.75 oz) can condensed cheddar cheese soup
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • Optional: 4 slices bacon, cooked and crumbled

Instructions

  1. Place the ground beef, chopped onion, and minced garlic into the basin of your slow cooker.
  2. Cook on low for 3 to 4 hours, or until the beef is fully browned and the onions are soft. Drain off any excess grease.
  3. Stir in the beef broth, diced potatoes, Italian seasoning, salt, and pepper.
  4. Cover and cook on low for an additional 3 to 4 hours, or until the potatoes are tender.
  5. Stir in the condensed cheddar cheese soup and heavy cream. Cook on low for 30 minutes more, stirring occasionally until heated through and creamy.
  6. Remove the slow cooker from the heat. Stir in the shredded sharp cheddar cheese until it melts completely into the soup.
  7. Serve immediately. Top each bowl with crumbled bacon, if using.

Notes

  • For a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir this slurry into the soup during the last 30 minutes of cooking.
  • If you prefer a Keto version, omit the potatoes and add 1 cup of cauliflower florets with the broth.
  • You can brown the beef on the stovetop before adding it to the slow cooker if you want to speed up the initial cooking time.
