2 cups pecan halves
1 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup unsalted butter, melted
1/4 cup water
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a large bowl, combine the pecan halves, granulated sugar, brown sugar, melted butter, water, cinnamon, and salt. Stir until the pecans are evenly coated.
Spread the coated pecans in a single layer on the prepared baking sheet.
Bake for 20 minutes, stirring halfway through.
Remove from the oven and stir in the vanilla extract.
Spread the pecans back into a single layer and let them cool completely on the baking sheet. They will crisp up as they cool.
Once cooled, break apart any clumps and store them in an airtight container.
Notes
For extra spice, you can add a pinch of nutmeg or cardamom along with the cinnamon.
