Make these soft, chewy cake batter cookies from scratch for the ultimate birthday cake flavor experience. This recipe includes optional white chocolate chips and plenty of sprinkles for a fun, gooey treat.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract (optional, for stronger cake flavor)
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup rainbow sprinkles (jimmies preferred)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together with an electric mixer until light and fluffy, about 3 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Mix in the vanilla extract and almond extract, if using.
  4. In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the rainbow sprinkles and white chocolate chips, if using.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 9 to 11 minutes. The edges should look set, but the centers should still look slightly soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an even stronger cake flavor, you can substitute 1 cup of the all-purpose flour with 1 cup of dry yellow cake mix.
  • To achieve the softest cookies, slightly underbake them. They will firm up as they cool.
  • Use jimmies style sprinkles rather than nonpareils, as nonpareils tend to bleed color excessively during baking.
