  • 1 pound fettuccine pasta
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cook fettuccine according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta is cooking, toss chicken pieces with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add butter to the same skillet. Once melted, add minced garlic and cook for about 1 minute until fragrant.
  5. Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes until slightly thickened, stirring occasionally.
  6. Reduce heat to low. Stir in Parmesan cheese until melted and the sauce is smooth.
  7. Return the cooked chicken to the skillet. Add the cooked fettuccine to the skillet. Toss to coat everything in the sauce.
  8. If the sauce is too thick, add a little reserved pasta water, a tablespoon at a time, until desired consistency is reached.
  9. Stir in chopped fresh parsley.
  10. Serve immediately.

Notes

  • Adjust the amount of Cajun seasoning to control the spice level.
  • For a spicier dish, add a pinch of cayenne pepper.
  • You can add vegetables like bell peppers or broccoli to this dish.
