1 medium head of green cabbage, thinly sliced
1 tablespoon neutral cooking oil (like canola or vegetable)
1 tablespoon fresh ginger, minced
3 cloves garlic, minced
1/4 cup low sodium soy sauce
2 tablespoons rice vinegar
1 tablespoon brown sugar
1 teaspoon sesame oil
1/2 teaspoon cornstarch
2 tablespoons water
Optional: 1/2 cup sliced carrots or bell peppers
Instructions
Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, sesame oil, and cornstarch until the cornstarch is dissolved. Set aside.
Heat the cooking oil in a large skillet or wok over medium-high heat until shimmering.
Add the minced ginger and garlic to the hot oil. Stir fry for about 30 seconds until fragrant. Do not let the garlic burn.
Add the sliced cabbage (and any optional vegetables) to the wok. Stir fry vigorously for 3 to 5 minutes until the cabbage wilts slightly but remains crisp. You want it tender-crisp.
Give the prepared sauce mixture a quick whisk again, then pour it over the cabbage in the wok.
Stir constantly for about 1 minute as the sauce thickens and coats the vegetables evenly.
Remove from heat immediately and serve hot.
Notes
For crispier cabbage, cook it in batches if your pan is small, or use very high heat.
To add protein, stir fry 6 ounces of cubed tofu, chicken, or shrimp first, remove them from the pan, and add them back in with the sauce in step 5.
If you prefer a spicier flavor, add 1/2 teaspoon of red pepper flakes with the garlic and ginger.
