Make this easy, creamy Buffalo Chicken Chili in your slow cooker for a perfect game day meal or simple weeknight dinner.

  • 2 lbs boneless, skinless chicken breasts
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes and green chilies, undrained
  • 1 (10 oz) can mild diced green chilies, undrained
  • 1 cup chicken broth
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch or blue cheese dressing
  • 1 (8 oz) package cream cheese, cubed
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Pour the black beans, kidney beans, diced tomatoes with green chilies, and green chilies over the chicken.
  3. Whisk together the chicken broth, buffalo sauce, and ranch or blue cheese dressing in a separate bowl. Pour this mixture over the ingredients in the slow cooker.
  4. Sprinkle the chili powder and cumin over everything. Add salt and pepper.
  5. Cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through.
  6. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  7. Add the cubed cream cheese to the chili. Stir until the cream cheese is completely melted and the chili is creamy.
  8. Stir well before serving.

Notes

  • For a spicier chili, increase the amount of buffalo sauce or add a dash of cayenne pepper.
  • Serve with toppings like shredded cheddar cheese, sour cream, or chopped green onions.
  • If you do not have a slow cooker, you can cook this on the stovetop over medium-low heat for about 1.5 hours, stirring occasionally.
