3 very ripe bananas, mashed
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1 large egg, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup fresh or frozen blueberries
1 tablespoon all-purpose flour (for coating berries)
Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
In a large bowl, mix the mashed bananas and melted butter until combined.
Stir in the sugar, egg, and vanilla extract until smooth.
In a separate medium bowl, whisk together the 1 1/2 cups flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
In a small bowl, toss the blueberries with 1 tablespoon of flour. This helps prevent them from sinking.
Gently fold the floured blueberries into the batter.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
Use bananas that are heavily spotted or almost black for the best moisture and flavor.
If using frozen blueberries, do not thaw them before adding them to the batter.
For a slightly crisp top, sprinkle 1 tablespoon of coarse sugar over the batter before baking.
