The Best Easy Velveeta and Rotel Dip for Game Day

Make this classic, cheesy Rotel Dip with Velveeta and ground beef or sausage. It is the perfect, quick appetizer for parties and game days.

  • 1 pound ground beef or bulk sausage
  • 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
  • 1 (16 ounce) package Velveeta cheese, cut into cubes
  • 1 teaspoon taco seasoning (optional)

Instructions

  1. Brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess grease completely.
  2. Return the meat to the skillet. Add the undrained Rotel tomatoes and the taco seasoning, if you are using it. Stir to combine.
  3. Reduce the heat to low. Add the cubed Velveeta cheese to the skillet.
  4. Stir constantly until the cheese is completely melted and the dip is smooth and creamy. This usually takes about 5 to 10 minutes.
  5. Serve the dip hot with tortilla chips, crackers, or vegetable sticks.

Notes

  • For a slow cooker version, combine all ingredients in a small slow cooker and cook on low for 1 to 2 hours, stirring occasionally until smooth.
  • If you prefer a cream cheese base instead of Velveeta, substitute 8 ounces of softened cream cheese for half of the Velveeta.
  • To keep the dip warm during a party, transfer the finished dip to a small slow cooker set to the ‘Keep Warm’ setting.
