Overnight Baked French Toast Casserole

Prepare this fluffy, custard-soaked French toast casserole the night before for an easy, make-ahead breakfast or brunch.

  • 1 loaf (about 1 pound) thick-cut bread (brioche or challah recommended), cut into 1-inch cubes
  • 12 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup maple syrup, for serving
  • Powdered sugar, for dusting (optional)

Instructions

  1. Lightly grease a 9×13 inch baking dish. Arrange the bread cubes evenly in the prepared dish.
  2. In a large bowl, whisk together the eggs, milk, heavy cream, sugar, cinnamon, vanilla extract, nutmeg, and salt until well combined.
  3. Pour the egg mixture evenly over the bread cubes, pressing down gently to submerge all the bread.
  4. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  5. When ready to bake, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Remove the plastic wrap.
  6. Bake uncovered for 45 to 55 minutes, or until the casserole is puffed, golden brown, and a knife inserted near the center comes out mostly clean.
  7. Let the casserole rest for 10 minutes before slicing and serving. Drizzle with maple syrup and dust with powdered sugar if desired.

Notes

  • For a richer flavor, use brioche or challah bread. Stale bread works well for soaking up the custard.
  • If you are short on time, you can bake this immediately after assembly, but allow the bread to soak for at least 30 minutes before baking.
  • Add 1 cup of fresh or frozen blueberries or sliced bananas over the top before baking for added fruit flavor.
