A simple, cheesy recipe for classic hot buffalo chicken dip using shredded chicken, perfect for game days and parties.

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup blue cheese dressing
  • 1/4 cup Frank’s RedHot Original Cayenne Pepper Sauce (or similar)
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh chives (for garnish)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish or a similar sized oven-safe skillet.
  2. In a large bowl, combine the softened cream cheese, ranch dressing, blue cheese dressing, and hot sauce. Mix until smooth.
  3. Stir in the shredded chicken, 3/4 cup of the cheddar cheese, and all of the Monterey Jack cheese until everything is evenly coated.
  4. Spread the mixture into the prepared baking dish.
  5. Top the dip evenly with the remaining 1/4 cup of cheddar cheese.
  6. Bake for 20 to 25 minutes, or until the dip is heated through and the cheese on top is melted and lightly golden brown.
  7. Remove from the oven and let it cool for 5 minutes before serving. Garnish with fresh chives.

Notes

  • For a thicker dip, reduce the amount of ranch and blue cheese dressing slightly.
  • You can substitute Greek yogurt for some of the dressing if you prefer a lighter texture.
  • Serve immediately with tortilla chips, celery sticks, carrot sticks, or sturdy crackers.
  • This dip can be assembled up to 24 hours ahead of time; cover and refrigerate, then add 5-10 minutes to the baking time.
