2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup apple cider
1/4 cup buttermilk
For the Topping:
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1 teaspoon ground cinnamon
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a donut pan, or line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
In a large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a small bowl, whisk together the apple cider and buttermilk.
Add half of the dry ingredients to the wet ingredients and mix until just combined.
Add the apple cider mixture and mix until just combined.
Add the remaining dry ingredients and mix until just combined. Do not overmix.
Spoon or pipe the batter into the prepared donut pan, filling each cavity about two-thirds full. If not using a donut pan, drop spoonfuls of batter onto the prepared baking sheet, leaving space between them.
Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
While the donuts are baking, prepare the topping. In a shallow bowl, combine the melted butter, sugar, and cinnamon.
Once the donuts are baked, let them cool in the pan for a few minutes before carefully transferring them to a wire rack.
Dip each warm donut into the melted butter and cinnamon-sugar mixture, coating both sides.
Place the coated donuts back on the wire rack to cool slightly before serving.
Notes
For a stronger apple flavor, you can add 1/4 cup of finely diced apple to the batter.
Ensure your butter is at room temperature for easier creaming.
Don’t overmix the batter, as this can result in tough donuts.
