12 large jalapeño peppers
8 ounces cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
2 cloves garlic, minced
1/4 teaspoon black pepper
12 slices bacon, cut in half
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice the jalapeños in half lengthwise and remove the seeds and membranes. Wear gloves to protect your hands from the jalapeño oils.
In a medium bowl, combine the softened cream cheese, cheddar cheese, Monterey Jack cheese, minced garlic, and black pepper. Mix until well combined.
Spoon the cheese mixture into each jalapeño half.
Wrap each stuffed jalapeño half with a half-slice of bacon, securing it with a toothpick if needed.
Place the wrapped jalapeños on the prepared baking sheet.
Bake for 20-25 minutes, or until the bacon is crispy and the jalapeños are tender.

Notes
For milder poppers, remove all seeds and membranes from the jalapeños. For spicier poppers, leave some seeds in.
You can make the cheese filling ahead of time and refrigerate it until ready to stuff the jalapeños.
If you don’t have toothpicks, you can secure the bacon by overlapping the ends tightly.
