  • 6 large eggs, hard-boiled and peeled
  • 1 ripe medium avocado
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons chopped fresh chives or parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Chop the hard-boiled eggs into small pieces. Place them in a medium bowl.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a separate small bowl.
  3. Mash the avocado thoroughly with a fork until it is smooth and creamy.
  4. Add the lemon juice and Dijon mustard to the mashed avocado. Mix well.
  5. Pour the avocado mixture over the chopped eggs.
  6. Add the chopped celery, red onion, and chives or parsley to the bowl.
  7. Gently fold all ingredients together until just combined. Avoid overmixing.
  8. Season with salt and black pepper to your preference.
  9. Serve immediately or chill before serving.
