You need a satisfying, healthy lunch that skips the mayonnaise. This creamy avocado chicken salad delivers high protein and healthy fats, making it perfect for quick meals or meal prepping for the week. It is keto-friendly and low-carb.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 2 ripe avocados, mashed
  • 1/4 cup plain Greek yogurt (optional, for extra tang and protein)
  • 2 tablespoons fresh lime juice
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, mash the ripe avocados until mostly smooth. Add the lime juice to the avocado and mix well to prevent browning.
  3. Add the mashed avocado mixture, Greek yogurt (if using), celery, red onion, and cilantro to the bowl with the chicken.
  4. Use a fork or spatula to gently fold all ingredients together until everything is evenly combined and creamy. Do not overmix.
  5. Season the salad with salt and pepper. Taste and adjust seasonings as needed.
  6. Serve immediately, or cover and chill for at least 30 minutes for best flavor integration. This salad is great for meal prep.

Notes

  • For a crunchier texture, add 1/4 cup of chopped pecans or sunflower seeds.
  • If you prefer a tangier flavor, increase the lime juice to 3 tablespoons.
  • Serve this high-protein chicken salad in lettuce cups for a low-carb lunch or alongside whole-grain crackers.
  • This recipe is excellent for meal prep; store it in an airtight container for up to 3 days.
