Make soft, chewy cookies using applesauce as a fat substitute. These cookies feature warm cinnamon spice and are easy to prepare.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy.
  4. Beat in the egg, applesauce, and vanilla extract until just combined. Scrape down the sides of the bowl as needed.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Do not overmix.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10 to 12 minutes, or until the edges are set and lightly golden.
  8. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer flavor, substitute 1/4 cup of the butter with browned butter.
  • If you prefer a less sweet cookie, reduce the granulated sugar by 1 tablespoon.
  • You can add 1/2 cup of rolled oats to the dough for an oatmeal applesauce cookie variation.
