  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 2 large apples, peeled and diced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons butter

Instructions

  1. In a blender, combine flour, eggs, milk, salt, melted butter, sugar, and vanilla extract. Blend until smooth.
  2. Pour batter into a bowl, cover, and let rest for 30 minutes.
  3. While the batter rests, combine diced apples, brown sugar, cinnamon, nutmeg, and lemon juice in a bowl.
  4. Melt 2 tablespoons of butter in a skillet over medium heat. Add the apple mixture and cook until apples are tender, about 5-7 minutes.
  5. Lightly grease a non-stick skillet or crepe pan. Pour about 1/4 cup of batter into the pan, tilting to spread evenly.
  6. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned. Flip and cook for another 30 seconds.
  7. Repeat with the remaining batter, stacking crepes as they are done.
  8. Fill each crepe with the cooked apple mixture and fold or roll.
  9. Serve warm.

Notes

  • For thinner crepes, add a little more milk to the batter.
  • You can add a pinch of cardamom to the apple filling for extra flavor.
  • Serve with whipped cream or vanilla ice cream for an extra decadent treat.
