2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup apple cider
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
For the Topping:
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 cup unsalted butter, melted
Instructions
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.
In a separate medium bowl, whisk together the apple cider, melted butter, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
While the muffins are baking, prepare the topping. In a small bowl, combine the 1/2 cup sugar and 1 teaspoon cinnamon. Place the 1/4 cup melted butter in another small bowl.
Once the muffins are out of the oven, let them cool in the tin for a few minutes.
Dip the tops of the warm muffins first into the melted butter, then into the cinnamon-sugar mixture.
Place the coated muffins on a wire rack to cool completely.
Notes
For an extra burst of apple flavor, you can fold in 1/2 cup of finely diced fresh apple into the batter.
Ensure your apple cider is good quality for the best flavor.
These muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
