Make quick, crispy zucchini fries in your air fryer with a savory Parmesan coating. This recipe avoids sogginess for a satisfying, healthier snack or side dish.

  • 3 medium zucchini
  • 1 large egg
  • 1 tablespoon water
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Cooking spray (olive oil or avocado oil based)

Instructions

  1. Wash and trim the ends of the zucchini. Cut each zucchini lengthwise into quarters, then cut those quarters into fry-sized sticks (about 3 to 4 inches long).
  2. Place the cut zucchini sticks on a few layers of paper towels and pat them very dry. This step helps prevent sogginess.
  3. Set up a three-stage breading station. In the first shallow bowl, whisk the egg and water together. In the second bowl, mix the flour, salt, and pepper. In the third bowl, combine the Panko breadcrumbs, grated Parmesan cheese, and garlic powder.
  4. Working in batches, dredge the zucchini sticks first in the flour mixture, shaking off excess. Then dip them into the egg wash. Finally, press them firmly into the Panko-Parmesan mixture until fully coated.
  5. Lightly spray the air fryer basket with cooking spray. Arrange the coated zucchini fries in a single layer in the basket. Do not overcrowd the basket; work in batches if necessary.
  6. Spray the tops of the coated fries lightly with cooking spray.
  7. Air fry at 390°F (199°C) for 10 to 14 minutes, flipping or shaking the basket halfway through the cooking time, until golden brown and crisp.
  8. Serve immediately with your preferred dipping sauce.

Notes

  • For extra crispness, you can lightly spray the fries again after the first 7 minutes of cooking.
  • If you prefer a lower-carb option, substitute almond flour for the all-purpose flour in the first dredging bowl.
  • Marinara sauce or a simple ranch dressing pairs well with these fries.
