4 medium bell peppers (any color)
1 tablespoon olive oil
1 pound ground turkey
1 small onion, chopped
2 cloves garlic, minced
1 cup cooked quinoa
1 (14.5 ounce) can diced tomatoes, drained
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese (optional)
Instructions
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Lightly brush the inside of the peppers with a little olive oil.
In a skillet over medium heat, cook the ground turkey and chopped onion until the turkey is browned. Drain any excess fat.
Stir in the minced garlic, cooked quinoa, drained diced tomatoes, oregano, salt, and pepper into the skillet. Cook for 2 minutes, stirring to combine the filling.
Preheat your air fryer to 375 degrees Fahrenheit.
Place the pepper halves open-side up in the air fryer basket in a single layer.
Spoon the turkey and quinoa mixture evenly into each pepper half.
Air fry for 15 minutes.
If using cheese, sprinkle the cheddar cheese over the tops of the peppers. Return to the air fryer and cook for another 3 to 5 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Carefully remove from the air fryer and serve immediately.
Notes
For a vegetarian option, substitute the ground turkey with 1.5 cups of cooked lentils or black beans.
If your air fryer basket is small, you may need to cook the peppers in batches.
If you prefer softer peppers, reduce the temperature to 360 degrees Fahrenheit and increase the cooking time by 5 minutes.
