1 (14.75 ounce) can pink salmon, drained and flaked
1 large egg, lightly beaten
1/2 cup dry breadcrumbs (use gluten-free if needed)
1/4 cup finely chopped celery
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 teaspoon dried parsley
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Cooking spray (oil of choice)
Instructions
In a medium bowl, combine the drained salmon, beaten egg, breadcrumbs, celery, mayonnaise, mustard, parsley, onion powder, and pepper. Mix gently until just combined; do not overmix.
Form the mixture into 6 equal-sized patties, about 1 inch thick.
Lightly spray both sides of each salmon patty with cooking spray.
Preheat your air fryer to 380°F (195°C).
Place the patties in a single layer in the air fryer basket, ensuring they do not touch. You may need to cook in batches.
Air fry for 10 to 12 minutes, flipping the patties halfway through the cooking time.
The patties are done when they are golden brown and heated through.
Serve immediately.
Notes
For a gluten-free option, substitute regular breadcrumbs with almond flour or gluten-free breadcrumbs.
If your patties seem too wet to handle, add one more tablespoon of breadcrumbs to the mixture.
These patties reheat well in the air fryer for 3 minutes at 350°F.
