Make ultra-crispy, guilt-free potato chips using your air fryer. This recipe focuses on proper slicing and drying techniques to achieve a big crunch without deep frying.

  • 2 medium Russet potatoes
  • 1 teaspoon olive oil or avocado oil
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon black pepper (optional)

Instructions

  1. Wash and thinly slice the potatoes. Use a mandoline slicer to get uniform slices about 1/16 inch thick. Uniformity is key for even cooking.
  2. Place the sliced potatoes in a large bowl of cold water. Soak them for at least 30 minutes, or up to 2 hours, changing the water once if possible. This removes excess starch, which prevents sticking and aids crisping.
  3. Drain the potatoes completely. Spread the slices out on a clean kitchen towel or several layers of paper towels. Pat them completely dry. Any remaining moisture will cause steaming instead of crisping.
  4. In a clean bowl, toss the dry potato slices with the oil, salt, and pepper until lightly coated.
  5. Preheat your air fryer to 350°F (175°C) for 5 minutes.
  6. Arrange the potato slices in a single layer in the air fryer basket. Do not overlap them; work in batches if necessary. Overcrowding prevents crisping.
  7. Air fry for 10 minutes.
  8. Carefully shake the basket. Continue to air fry in 2 to 4-minute intervals, checking frequently, until the chips are golden brown and firm (about 14 to 18 minutes total cook time).
  9. Remove the chips immediately from the air fryer and place them on a wire rack to cool completely. They will crisp up more as they cool.
  10. Serve immediately or store in an airtight container once fully cooled.

Notes

  • For extra flavor, toss the dried slices with 1/2 teaspoon garlic powder or onion powder before oiling.
  • If your chips are not fully crisp after cooling, return them to the air fryer for 1 to 2 minutes at 375°F (190°C).
  • Always slice potatoes thinly and soak them well to get the best crunch.
