1/2 cup all-purpose flour
1 large egg, beaten
1 cup panko breadcrumbs
1/2 teaspoon salt

For Tartar Sauce:
1/2 cup mayonnaise
2 tablespoons finely chopped dill pickle relish
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon chopped fresh dill (optional)
Instructions
Prepare the breading station: Place flour in one shallow dish. Whisk the egg in a second dish. Mix panko breadcrumbs, salt, pepper, and garlic powder in a third dish.
Pat the fish fillets completely dry with paper towels. This step helps achieve crispiness.
Dredge each fillet first in the flour, shaking off excess. Dip into the egg mixture, letting excess drip off. Press firmly into the panko mixture to coat thoroughly on all sides.
Preheat your air fryer to 400°F (200°C) for 5 minutes.
Lightly spray the air fryer basket with cooking spray. Place the breaded fillets in a single layer in the basket, ensuring they do not touch. Spray the tops of the fillets generously with cooking spray.
Air fry for 10 to 12 minutes, flipping the fillets halfway through the cooking time. Spray the second side lightly with cooking spray before flipping. The fish is done when the coating is golden brown and crispy, and the internal temperature reaches 145°F (63°C).
While the fish cooks, prepare the tartar sauce: Combine mayonnaise, pickle relish, lemon juice, Dijon mustard, and fresh dill (if using) in a small bowl. Mix well.
Lightly toast the sandwich buns in the air fryer for 1-2 minutes, or in a toaster.
Assemble the sandwiches: Spread tartar sauce on both halves of the bun. Place lettuce, a crispy fish fillet, tomato slices, and pickles on the bottom bun. Top with the other bun half.

For the crispiest result, ensure your fish fillets are very dry before breading.
